Lovely free range eggs make wonderful breakfast recipies

Scrambled Egg Breakfast
For scrambled eggs, patience and a spot of cream makes all the difference. For one person we use 3 organic eggs from the local farm, a spot of milk and a pinch of salt. Place into a non stick pan and slowly cook them under a lowish heat- this is where the patience comes in as it takes time. The other secret is to make sure the eggs don’t start to stick to the bottom by constantly stirring the eggs.
As they gradually turn creamy and are soft and ready to eat add a spot of double cream – yummy and there you have it the finished thing.
I am sure I read somewhere that Jamie Oliver doesn’t like doing poached eggs. Well then – may he should come to one of our master classes! I’ve read countless ways of poaching eggs but our way does work.
Fresh eggs are critical, a large pan filled two thirds full with boiling water and some white wine vinegar. When the water is boiling add two or three table spoons of white wine vinegar. Don’t fill the pan to the top otherwise when you start to whisk aggressively to get the whirl pool in the centre it could spill over. Once you get the whirl pool which takes some time, add the egg that you have broken into a handled cup into the centre of the vortex. Poach for 1.30 seconds and then out it comes drain the water off and bingo a perfect soft runny poached egg.
